Super Staples - Buckwheat Sourdough

Buckwheat the star ingredient can assist our nourishment as it contains two antioxidant bioflavonoids, Rutin, and Quercetin.
Quercetin is one of my personal favourite, must know about anti-oxidants that doesn’t get enough air time:
It works on a number of anti-inflammatory pathways in the body that assist in a similar way to aspirin, by inhibiting the pathways ways that produce inflammation. Some initial inflammation is natural and important for our bodies own innate healing process but when inflammation becomes chronic leading to systemic issues then that is when things need to be addressed. This would be in the cases of skin issues such as Psoriasis, Eczema; bowel issues such as Irritable Bowel Syndrome or Leaky Gut; Arthritis or various autoimmune diseases.
In a similar anti-inflammatory fashion, due to its biochemical structure it can assist in reducing the number of histamines that are released in a histamine reaction, therefore potentially reducing the symptoms that come from an allergic response.
Can assist in the uptake of glucose into cells reducing large amounts of free glucose in the blood stream, therefore improving the biochemical pathways in which insulin functions, thus reducing the oxidation damaged caused by too much free glucose. In essence potentially lowering the risk to pre-diabetic symptoms.
Like our friend Rutin (see below), it also has similar functions of reducing LDL and improving cardiovascular health.
Rutin can be found in a number of plants and fruits, so if ingested in enough variations of foods can assist with:
Improving the strength and flexibility of our blood vessels. Thus, assisting greater the circulation of the blood throughout the body ensuring toxins are removed and managed properly, whilst boosting energy levels as iron and oxygen are better transported to various organs and tissues in the body.
Has been shown to assist in the breakdown of LDL (unhealthy) cholesterol, by reducing the oxidation of cholesterol which causes plaque build up and damage to the blood vessels.
Due to both the action of improving blood flow and assisting in reducing LDL build up, it can in the long run help to reduce the incidence of blood clots.
